Chile Relleno Savory Bread Pudding

This savory bread pudding combines roasted chilies, golden raisins, Monterrey Jack cheese with leftover cornbread and biscuits and a cumin-oregano flavored custard.

Mexican oregano, dried

Cumin, ground

Prep
  1. Add diced, baked biscuits to a large mixing bowl with cornbread cubes, roasted peppers, golden raisins, onion and garlic.
  2. Stir gently or toss until well-combined; transfer half of mixture to greased 2-inch, 1/2 hotel pan.
  3. Place cheese strips on top and cover with remaining biscuit mixture; set aside.
Assembly
  1. Whisk together cream, eggs, chicken base, oregano, cumin and coriander in large bowl until well-combined.
  2. Pour into hotel pan evenly over biscuit mixture, making sure all the biscuits are saturated.
  3. Bake as directed below until golden brown, pudding is set and the temperature in the middle reaches 165°F; serve warm.
