Dried cherries and apricots make a tangy fruit filling for a filled pastry that's sliced into cookie bars.

Fruit Filling

Filling
  1. Mix filling ingredients in saucepan and heat to boiling over medium heat.
  2. Remove from heat and cool 5 minutes.
  3. Chop filling mixture until fine in food processor and set aside.
Dough
  1. Mix dough ingredients in mixer bowl, using paddle attachment on low speed 1 minute.
  2. Stop mixer, scrape bowl and paddle; mix on medium speed approx. 2 minutes or until dough is soft and pliable.
  3. Roll dough between 2 sheets of parchment paper to approx. 16 x 24-inches.
  4. Remove top sheet of parchment paper and cut dough into 5 even pieces (approx. 4 3/4 x 16-inches).
  5. Spread filling evenly down center of each piece; fold each side to center to cover filling.
  6. Place cookie logs, seam-side down, on greased or parchment-lined sheet pans; bake as directed below.

*Rotate pans baked in convection oven one-half turn (180°) after 12 minutes of baking.
Finishing
  1. Cool cookie logs completely and cut each into 18 slices (approx. 3/4-inch wide).
  2. Heat vanilla icing in microwave until melted and drizzle over sliced cookies.
  3. Allow icing to set before serving.
