Cherry Limeade Mini Shots

Here's a little shot, dessert style. Layer up pudding and pie filling in a shot glass, and top with cake "ice cubes."

Vanilla pudding, prepared

Cherry pie filling
1 lb 1.00 oz

Whipped topping

  1. Prepare batter according to package directions for half a box, adding lime gelatin powder in first step.
  2. Pour total amount of batter into a greased or parchment-lined half sheet pan.
  3. Bake as directed below, allow to cool and freeze cake for better handling.

*Rotate pans baked in convection oven one-half turn (180°) after 13 minutes of baking.
Assembly
  1. Cut cake into 1/4-inch cubes.
  2. Place or pipe 0.5 oz of vanilla pudding in bottom of shot glass or disposable glassware.
  3. Add a #40 scoop of cherry pie filling on top of pudding (approx. 0.75 oz).
  4. Place 0.3 oz of lime cake cubes on top of pie filling (approx. 8 cubes).
  5. Pipe a rosette of whipped topping onto cake cubes (approx. 0.25 oz).
