Cherry Berry Coffee Cake

A whole-grain coffee cake loaded with dried cherries, blueberries and applesauce is sprinkled with oats.

  1. Chop cherries into medium diced pieces; set aside.
  2. Stir water and applesauce together in mixing bowl with whisk until well blended.
  3. Add muffin mix; mix until well blended. DO NOT overmix.
  4. Fold blueberries and diced cherries into batter.
  5. Divide batter evenly between 2 sprayed full steam table pans.
  6. Sprinkle oats evenly across top and bake as directed below.
