Cherry Apricot Smoothies

Vanilla yogurt blended with cherries and apricots makes a delectable smoothie that earns its name with a distinctive purple color.

Red tart cherries, pitted, canned, drained, chilled

Apricot halves, canned, drained, chilled

  1. Place chilled fruit in large capacity blender (or prepare in batches).
  2. Blend on high speed 1 minute; stop blender and stir with spatula.
  3. Continue to blend until smooth.
  4. Measure to verify that pureeing has resulted in 8 cups of fruit (for nutritional requirements if needed); puree additional fruit if necessary.
  5. Whisk puree and yogurt together in a large mixing bowl until smooth.
  6. Portion into serving cups and cover. Serve chilled. Smoothies may be refrigerated overnight.

  • Garnish with an additional apricot slice, if desired.
