Prep
  1. Thaw croissant bun, covered, at room temperature 15-30 minutes.
Filling
  1. Add Mascarpone cheese, powdered sugar and almond extract to a medium bowl.
  2. Mix together until thoroughly combined.
Assembly
  1. Add eggs, milk and cinnamon to a medium bowl; whisk together until thoroughly combined.
  2. Separate croissant bun into 2 halves; dip each piece into egg mixture coating both sides thoroughly.
  3. Place on lightly greased griddle, preheated to 350°F and gently press down each piece with stainless steel spatula or turner.
  4. Cook approx. 2-3 minutes per side or until golden brown; keep warm.
Finishing
  1. Place bottom croissant bun piece on serving plate; top with 2 oz Filling mixture.
  2. Top with other croissant piece; spoon on 2.5 oz warm cherry compote.
  3. Garnish with 1 Tbsp sliced almonds and dust with powdered sugar; serve immediately.

  • Substitute cherry pie filling for cherry compote or combine cherry pie filling with cherry jam for a quick substitute.
