It's not your ordinary grilled cheese! Savory corn and pepper crepes replace tortillas in a luscious twist on a two-cheese quesadilla.

Cheddar cheese, shredded

Mozzarella cheese, shredded

Crepe
  1. Pour total amount of water and eggs into a mixing bowl; mix using a wire whisk until blended.
  2. Add total amount of mix to egg mixture; mix using a wire whisk until batter is blended and smooth.
  3. Fold in remaining crepe ingredients.
  4. Deposit 2 oz of batter onto a griddle preheated to 375°F.
  5. Allow batter to flow into disc approx. 5-inch in diameter.
  6. Cook the crepe until the edges are brown and the underside is golden; flip and cook approx. 2 minutes more. Remove crepes from griddle.
Assembly
  1. Mix two cheeses together until well blended.
  2. Spread 1 oz shredded cheese evenly across top of one crepe.
  3. Place a second crepe on top of the cheese layer.
  4. Place entire quesadilla back onto griddle and allow to heat until cheese is melted through.
  5. Cut quesadilla into four wedges and serve.
