Cheddar Chili Corn Biscuits

Chili beans, canned, drained

Black beans, canned, drained

Cheddar cheese, shredded

Chili powder
6 Tbsp
Cumin, ground
2 Tbsp
Coriander, ground
6 Tbsp
Topping
  1. Mix 1 cup cheddar cheese and kosher salt in small mixing bowl. Set aside.
Biscuits
  1. Mix water and sour cream in large mixing bowl using rubber spatula.
  2. Add chili beans, black beans, 4 cups cheddar cheese and the spices to sour cream mixture.
  3. Stir until well blended. Add biscuit mix and muffin mix.
  4. Mix using rubber spatula approx. 30 strokes or until soft dough forms. DO NOT OVERMIX.
  5. Deposit 3 oz (#12 scoop) of dough in 4 x 6 placement on lightly greased or parchment-lined full sheet pans.
  6. Sprinkle each biscuit with a pinch of cheese and salt topping. Press down slightly to shape, if desired.
  7. Bake as directed below.
