Checkerboard Icebox Cookies

Yellow and devil's food cake mixes are the starting point for unique and tasty checkerboard-pattern cookies made easy with a clever stack-and-slice method.

Dough 1
  1. Add yellow cake mix, 1 lb butter and 2 Tbsp vanilla extract to mixer bowl with paddle attachment.
  2. Mix on low speed 3-4 minutes until combined.
  3. Divide dough in half (approx. 3 lb each) and place into separate 1 gallon food safe bag.
  4. Refrigerate if not assembling immediately, or for easier handling.
Dough 2
  1. Add devil's food cake mix, 1 lb butter and 2 Tbsp vanilla extract to mixer bowl with paddle attachment.
  2. Mix on low speed 3-4 minutes until combined.
  3. Divide dough in half (approx. 3 lb each) and place into separate 1 gallon food safe bag.
  4. Refrigerate if not assembling immediately, or for easier handling.
Assembly
  1. Open small portion of bags to allow air to escape; press dough flat and roll to an even size with rolling pin.
  2. Cut bags to remove dough; stack sheets on top of each other, alternating colors.
  3. Cut into 2-inch sections (4 total), then cut each section into 4 strips (16 total).
  4. Place strips, alternating colors, into a 4 x 4 sections to make checkerboard appearance; press together to adhere layers and create a log.
  5. Cut into 1/4-inch slices, place onto greased or parchment-lined full sheet pan and bake as directed below.
