Carrot, Raisin, Coconut Breakfast Cookies

Breakfast on the go has never been so tasty! Hearty cookies are packed with raisins, carrots and pecans, then drizzled with an orange glaze.

Dough
  1. Pour orange juice into mixer bowl; add muffin mix, pecans, carrots, raisins, coconut, wheat germ and cinnamon; mix on low speed for 30 seconds.
  2. Stop mixer, scrape bowl and paddle; mix on low speed for an additional 30 seconds.
  3. Place dough, using a #24 scoop, onto parchment-lined full sheet pan in a 4x3 pattern.
  4. Press down cookie dough to flatten; bake as directed below and allow to cool.

*Rotate pans baked in convection oven one-half turn (180°) after 7 minutes of baking.
Garnish
  1. Combine powdered sugar and orange juice; blend well.
  2. Spoon glaze over cookies and allow to set.
  3. Serve or store covered in a cool, dry place.
