Carrot Pineapple Muffins

Shredded carrots and crushed pineapple add texture and taste to a whole-grain muffin.

  1. Combine applesauce and water in mixing bowl.
  2. Add muffin mix and spices. Mix until well blended. DO NOT OVERMIX.
  3. Fold pineapple and carrots into batter.
  4. Deposit using #16 scoop into greased or paper-lined muffin pans.
  5. Bake as directed below.
