Carrot Cake

It's the classic carrot cake with shredded carrots, coconut, raisins and walnuts. The moist, spiced cake is topped with the equally classic cream cheese icing.

Batter
  1. Mix half of the water and the entire cake mix in mixer bowl using paddle attachment on medium speed 2 minutes.
  2. Stop mixer, scrape bowl and paddle. Add remaining water. Mix 2 minutes on low speed.
  3. Add carrots, walnuts, coconut, raisins, vanilla and spices to batter. Mix on low speed 1 minute.
  4. Deposit 1 lb 5 oz of batter into each of 8 well greased 8-inch round cake pans.
  5. Bake as directed below and allow to cool.

*Rotate pans baked in convection oven one-half turn (180°) after 12 minutes of baking.
Icing
  1. Stir cream cheese in mixer with paddle attachment 5 minutes on medium speed.
  2. Add vanilla icing, and mix on low speed until smooth, approx. 1 minute.
  3. Refrigerate until ready to assemble cake. Use two 8-inch layers for each cake.
  4. Spread approx. 10 oz icing on bottom cake layer. Place second cake layer on top of icing.
  5. Frost top and side of cake with approx. 22 oz of the remaining icing.
