Carrot cake reinvented as a scone! Gold Medal™ Buttermilk Biscuit Mix with shredded fresh carrots, cinnamon and nutmeg bake up with familiar tastes as a tender, melt-in-your mouth scones.

Dough
  1. Add water to mixing bowl. Add remaining scone ingredients, and mix using rubber spatula approx. 30 strokes or until soft dough forms. Do not overmix.
  2. Deposit scone dough using #20 scoop onto lightly greased or parchment-lined full sheet pans in 4x6 pattern.
  3. Bake as directed below.

*Rotate pans baked in convection oven one-half turn (180°) after 5 minutes of baking.
Finishing
  1. Heat icing in microwave until melted.
