Heat oil in medium saucepan over medium-high heat and add onions.
Sauté until caramelized, approx. 20-25 minutes; divide evenly into 2 portions. Set aside to cool.
Spray muffin cups of a mini muffin pan generously with pan spray.
Cut each muffin puck into 4 pieces. Place one quarter corn muffin puck into each mini muffin cup. Thaw 5 minutes.
Press muffin pucks into bottom of muffin cups to completely cover.
Place goat cheese in food processor, and pulse until it is a smooth paste.
Add eggs, heavy cream, basil, white pepper, kosher salt and garlic powder. Pulse to combine.
Top each muffin puck with approx. 1 tsp of the caramelized onion.
Fill with 1 oz of goat cheese filling using a #30 scoop.
Bake as directed below; top with remaining caramelized onions and serve while hot for best flavor.
