Caramel Apple Cupcakes

Buttery apples are folded into cupcake batter, and the jumbo cupcakes are topped with cream cheese icing and drizzled with caramel sauce. Heavenly!

Batter
  1. Add butter and apples to a medium sauté pan; cook until slightly tender and allow to cool.
  2. Follow package directions for cupcake batter, substituting apple juice for water and adding spices and caramel topping in step 1.
  3. Fold cooled apples into batter gently until well mixed.
  4. Deposit #12 scoop of batter into greased or paper-lined muffin pans.
  5. Bake as directed below and allow to cool completely.

*Rotate pans baked in convection oven one-half turn (180°) after 11 minutes of baking.
Icing
  1. Add cream cheese to mixer bowl fitted with paddle attachment; mix on high for 3 minutes.
  2. Add vanilla icing and mix on medium speed for 2 minutes or until well combined.
Finishing
  1. Pipe 1.25 oz of icing mixture (using star tip) on each cooled cupcake.
  2. Drizzle on approx. 1/2 tsp caramel topping and serve.
