Candied Bacon and Rosemary Shortbread Cookies

Nontraditional flavorings are finding their way into shortbreads, like this savory sweet -and-salty cookie that is fabulous as as an appetizer.

Bacon slices, raw

Brown sugar, packed

1/4 cup
Butter, unsalted, softened
8 oz
1 cup
Rosemary, dried, ground

Water, cool approx. 72°F

1/4 cup
  1. Place bacon slices on parchment-lined sheet pan; evenly sprinkle with brown sugar.
  2. Bake according to package directions or until tender-crisp. Allow bacon to cool and then chop with a knife.
  3. Add butter and muffin mix to mixer bowl. Mix on low speed with paddle attachment for 2 minutes.
  4. Stop mixer, scrape bowl and paddle. Add remaining ingredients to mixer bowl and mix on low speed for an additional 2 minutes.
  5. Deposit dough on a parchment-lined sheet pan using a #70 scoop in a 6 x 8 pattern.
  6. Place a piece of parchment paper on top of cookies.
  7. Place a second sheet pan on top of the parchment paper and press down firmly and evenly to flatten the cookies to approx. 1/4-inch thickness.
  8. Remove the second sheet pan and parchment once the cookies are flattened.
  9. Bake as directed below; cool completely and store in airtight container.
