Biscuits
  1. Thaw biscuits for 15-30 minutes at room temperature.
  2. Cut biscuits into six pieces and place in mixing bowl; toss with melted butter until evenly coated.
  3. Place biscuit pieces on parchment lined or greased sheet pan.
  4. Bake as directed; set aside until ready to assemble.

Assembly
  1. Per serving, preheat a large skillet over medium-high heat; add 1 Tbsp (0.5 oz) melted butter.
  2. Add 3 oz sweet potatoes, 2 oz brisket, 1 oz peppers and 0.5 oz onions to skillet; stir to combine and cook until heated thoroughly.
  3. Add 6 biscuit pieces (1 biscuit) to pan and carefully stir to combine; do not overmix.
  4. Transfer to serving dish and top with 2 sunny side up eggs; serve immediately.

  • Garnish with scallions and sliced green chilies if desired.
