Breakfast Pinwheels

These pinwheels start with biscuit mix and can be stuffed with your favorite breakfast fillings for a different presentation.

Dough
  1. Place water and biscuit mix in mixer bowl with paddle attachment.
  2. Mix on low speed until combined, approx. 1 1/2 minutes.
  3. Divide dough into thirds, weighing 2 lb 7 oz each.
Assembly
  1. Cook eggs in medium skillet to soft scramble. Remove from heat.
  2. Roll dough pieces on lightly floured surface into 24 x 12-inch rectangles
  3. Spread salsa, scrambled eggs, cheese and bacon evenly over rectangles.
  4. Roll up dough, starting with long edge, into tight spiral.
  5. Cut each roll into 10 slices, approx. 1 1/2-inches thick.
  6. Place rolls, laying flat, onto greased or parchment-lined full sheet pan in 5x6 pattern.
  7. Bake as directed below.
