Breakfast Lava Cakes

Cheese is the lava in fabulous Gold Medal™ Corn Muffins stuffed with egg, sausage and chiles.

Chipotle chilies in adobo sauce, finely chopped

Breakfast sausage links, cooked, roughly chopped

Cheese sauce, canned

Blue corn chips, crushed

  1. Pour water into mixing bowl, and add muffin mix. Use a whisk or rubber spatula and mix until batter is smooth.
  2. Fold in black pepper, chipotle, sausage, and cheddar cheese to combine. Do not over mix.
  3. Scoop using a #12 scoop into a greased jumbo muffin pan.
  4. Fill a pastry bag with cheese sauce and pipe 0.5 oz into center to fill muffin batter.
  5. Press slightly in the center of the muffin batter using the back side of a #12 scoop, to create a small/deep well.
  6. Crack a whole egg into the center of the muffin batter.
  7. Sprinkle evenly approx. 1 Tbsp crushed blue corn chips over batter.
