Prep
  1. Thaw flatbreads covered, either at room temperature 15-30 minutes or refrigerated overnight.
Filling
  1. Combine shredded beef, cooked eggs, green enchilada sauce, drained tomatoes, quesadilla cheese, and green chilies in a large bowl.
Assembly
  1. Warm flatbread in microwave or on a grill until flexible; brush both sides with oil then cut in half crosswise (into 2 squares).
  2. Spoon 3/4 cup red enchilada sauce evenly into the bottom of a greased half hotel pan.
  3. Place 5 oz Filling mixture in a line on each flatbread piece; roll up tightly and place seam-side down into enchilada sauce, spacing evenly.
  4. Pour remaining red enchilada sauce over top then sprinkle on Mexican cheese.
  5. Bake as directed until internal temperature reaches 165°F, cheese is bubbly and lightly browned; serve warm.
