Prep
  1. Thaw biscuits, covered, either at room temperature 15-30 minutes until flexible, or refrigerated overnight.
Filling
  1. Mix eggs, cheese, sausage, peppers, onion, and seasonings together in a large bowl until fully incorporated.
Assembly
  1. Stretch or roll biscuit dough into 4 1/2-inch diameter.
  2. Add 1-#20 scoop (1.5 oz) Filling mixture to center of each biscuit.
  3. Pinch edges together to seal and roll into a ball; place side-seam down on parchment-lined sheet pan.
  4. Brush biscuits with melted butter and sprinkle with sesame seeds; bake as directed and serve warm.
