Bourbon Cream and Strawberry Topped Cinnamon Crisps

Cinnamon roll dough is flattened before baking to create Cinnamon Crisps and then topped with a Bourbon Whipped Cream, strawberries and sprinkles.

Bourbon Cream
  1. Add 1 lb of yogurt and the cream cheese to mixer bowl fitted with wire whisk; mix on medium speed until smooth, about 3 minutes.
  2. Stop mixer and scrape down sides and whisk with rubber spatula.
  3. Add remaining yogurt and process until thoroughly mixed.
  4. Gradually add Bourbon while mixing on low speed until smooth.
  5. Cover or transfer to air-tight container and refrigerate until needed.
Cinnamon Crisps
  1. Thaw rolls, covered either at room temperature approx. 15-30 minutes until flexible or refrigerated overnight.
  2. Widely space 8 thawed rolls on each piece of lightly greased parchment paper on a work surface.
  3. Cover with an additional piece of lightly greased parchment paper; use a rolling pin to flatten each roll into an approx. 6-in diameter (without overlapping).
  4. Remove top parchment and scrape extra filling back onto rolls; place bottom parchment (with rolls) onto full-sided sheet pans.
  5. Sprinkle each flattened roll with 1/2 Tbsp coarse sugar; bake as directed until evenly browned and allow to cool.

*Rotate pans baked in convection oven one-half turn (180°) after 4 minutes of baking.
Finishing
  1. Place 1 Cinnamon Crisp on serving plate; add 2, #12 scoops of Bourbon Cream and spread in the center leaving a 1-inch border edge.
  2. Scatter 1/2 cup sliced strawberries over cream, 1/2 tsp rainbow sprinkles and 1/2 tsp chocolate sprinkles.
  3. Garnish with 1 whole strawberry and serve immediately.

  • Substitute 1 tsp Almond Extract for Bourbon for a family-friendly flavor. Create individual 4th of July dish by arranging 1/4 cup sliced strawberries and 1/4 cup blueberries in the cream, add a flag pick in the center and add red, white and blue sprinkles.
