  1. Prepare cake mix according to package directions.
  2. Deposit total amount of batter into greased and parchment-lined full sheet pan.
  3. Bake as directed below and allow to cool; cut into 12 - 4 x 8-inch sections.
  1. Convection Oven* | 300°F | 27-32 minutes
  2. Standard Oven | 350°F | 30-35 minutes
  3. *Rotate pans baked in convection oven one-half turn (180°) after 23 minutes of baking.
  1. Slice each section in half horizontally.
  2. Spread 4 oz lemon filling evenly over bottom layer; arrange 1/4 cup blueberries and replace the top layer.
  3. Frost the entire cake section with 4.25 oz of whipped topping; pipe a border (using shell tube #22) of 1 oz around the top edge.
  4. Add 6 oz lemon filling and spread evenly within whipped topping border.
  5. Place 1/4 cup blueberries and a whole strawberry cut like a fan on top; brush fruit with 1 Tbsp warm apricot glaze.
  6. Garnish sides of each with 0.5 oz chocolate shavings (using a vegetable peeler).
