Toasted almonds give a blueberry bran muffin an added crunch.

Almond extract
2 tsp
Quick oats, dry
3 oz
1 cup
Toasted Almonds
Toast almonds on sheet pan in 350°F oven 5-7 minutes or until light golden brown.
Set aside to cool.
Batter
Pour 4 cups water and wheat bran into mixing bowl; allow to soak at least 5 minutes.
Combine in separate bowl the remaining 4 3/4 cups water and muffin mix.
Fold in soaked wheat bran, almonds, blueberries and almond extract. DO NOT OVERMIX.
Deposit #10 scoop of batter into greased or paper-lined muffin pans.
Sprinkle quick oats evenly on top and bake as directed below.
