Kalamata olives, pitted, sliced

Parmesan cheese, grated

Prep
  1. Thaw biscuit dough, covered, either at room temperature approx. 15-30 minutes until flexible or refrigerate overnight.
Gnocchi
  1. Combine parmesan cheese and potato starch in a medium bowl.
  2. Knead biscuit dough with hands to develop more gluten, then use a little of the parmesan mixture to roll out to an 8-inch log.
  3. Cut dough into approx. 1/4-inch pieces, roughly 18 individual pieces; toss into parmesan mixture, tapping off excess.
  4. Heat olive oil in sauté pan and lightly brown both sides of dough to ensure they are cooked through (approx. 2 1/2-3 minutes per side); set aside.
Assembly
  1. Add chunky tomato and pepper sauce, chicken broth and sliced olives to sauté pan; bring to a boil until slightly thickened.
  2. Remove from heat, add cooked Gnocchi pieces and toss to coat.
  3. Transfer to serving dish and garnish with parmesan cheese; serve immediately.
