Berry Nut Biscotti

Whole wheat flour and whole-grain muffin mix team up as the start to an amazingly crunchy, dunkable, twice-baked cookie.

Dried cranberries

Walnuts, chopped

  1. Place all ingredients in a mixer bowl; mix on low speed using a paddle attachment approx. 1 minute.
  2. Stop mixer, scrape bowl and paddle; mix additional 30 seconds until well combined.
  3. Divide dough equally into four loaves, approx. 2 lb 3 oz each.
  4. Place 2 loaves onto each greased or parchment-lined full sheet pans.
  5. Shape each loaf into a 4-inch wide X 11-inch long rectangle.

*Rotate pans baked in a convection oven one-half turn (180°) after 10 minutes of baking.
  1. Cool loaves completely, approx. 1 hour.
  2. Slice each loaf into 3/4-inch thick slices (center of loaves may be a bit doughy).
  3. Place slices, standing upright, onto parchment-lined full sheet pans.
  4. Bake as directed below and cool completely before serving.
