Smoked beef brisket, prepared, julienne sliced

Caramelized Onions
  1. Heat oil in large skillet over medium heat.
  2. Add onion and stir to coat in oil. Cook slowly, stirring occasionally, about 20 minutes or until caramelized. Allow to cool.
Scrambled Eggs
  1. Beat eggs in medium bowl with whisk. Heat oil in large skillet over medium-high heat.
  2. Add eggs to skillet, and stir with wooden spoon or heatproof spatula. Cook eggs to soft scramble, until liquid is set.
Dough
  1. Prepare dough according to package directions, adding cheese in step 2 of the package directions.
  2. Divide dough in half, approx. 3 lb 10 oz each. Press dough evenly with floured hands into 2 greased full sheet pans.
Assembly
  1. Spread 10 oz BBQ sauce evenly over each dough.
  2. Deposit 1 lb 9 oz of scrambled eggs evenly over BBQ sauce on each.
  3. Sprinkle on 10 oz caramelized onions, 12 oz beef brisket and 5 oz cheese evenly on top.
  4. Bake as directed below.
