Banana Split Quick Bread

This fab quick bread features the stars of the ice cream classic: strawberries, pineapple and bananas along with chocolate chips.

Servings: 40 servings (1 serving = 1 Slice)

Strawberries, IQF, unsweetened

Pineapple chunks, canned in juice

1 cup
Water, cool approx. 72°F
12 oz
1 1/2 cups
Sour cream
8 oz
1 cup
Bananas, overripe, mashed
1 lb
2 cups
Semi-sweet chocolate chips
13 oz
2 cups
  1. Thaw and drain strawberries and pineapple; set aside.
  2. Pour water and sour cream into mixing bowl; add muffin mix and bananas.
  3. Mix using whisk or rubber spatula until batter is smooth.
  4. Gently fold fruit and chocolate chips into batter; deposit (1 lb 12 oz) batter into 5 greased loaf pans.
  5. Bake as directed below.
