This pie is truly a crowd pleaser that combines bananas, toasted coconut and Cinnamon Toast Crunch™, all in a convenient slab form.

Cereal Milk Whipped Cream
  1. Add cream and cereal to large pitcher; cover and refrigerate 1 hour to allow cereal to steep.
  2. Strain mixture through fine sieve, pressing gently on cereal to extract flavor; discard cereal.
  3. Whip until hard peaks form and refrigerate until needed.
Crust
  1. Mix graham cracker crumbs, butter and sugar in medium bowl; press evenly in bottom and up sides of pan.
  2. Bake as directed below until crust is set; allow to cool completely.

Filling
  1. Add coconut milk to medium sauce pan; in separate bowl, combine sugar and cornstarch.
  2. Whisk sugar mixture into pan and cook over medium heat 4-6 minutes, stirring frequently until mixture thickens and boils.
  3. Cook 1 minute longer; remove from heat and stir in vanilla extract.
  4. Place banana slices in single layer over baked crust; spread warm filling evenly over top.
  5. Cover with plastic wrap and refrigerate 2 hours until cool and set.
Finishing
  1. Spread whipped cream over cooled filling; sprinkle with toasted coconut.
  2. Store loosely covered, under refrigeration until ready to serve.
