Pancakes
  1. Add water and pancake mix to mixing bowl; whisk together until smooth.
  2. Prepare 32 pancakes as directed on package, using a 2 oz ladle for 4-inch pancakes; allow to cool.
  3. Cut pancakes in half and set aside.
Assembly
  1. Place 16 pancake pieces into 2 rows (cut-side down) into each of 2, well-greased 2-inch half steam table pans.
  2. Scatter 1 cup blueberries over each row of pancakes, tucking about half or blueberries between slices.
  3. Sprinkle 1/2 tsp of cinnamon over each row.
  4. Combine eggs and yogurt in medium mixing bowl; mix thoroughly.
  5. Pour half of mixture into each pan; use a rubber spatula to work some of the liquid between slices.
  6. Sprinkle 1/4 cup raw sugar per pan evenly over the top.
  7. Bake as directed below until knife inserted in center comes out clean and the internal temperature is approx. 190°F.
  8. Cool slightly and use a serrated knife to cut each pan into 16 portions; serve warm.

*Rotate pans baked in convection oven one-half turn (180°) after 17 minutes of baking.

  • Cut into 4x12 and serve 3 slices shingled on a plate if desired. Serve with maple syrup, sausage and orange segments for a complete meal. Make it strawberry by substituting frozen strawberries, strawberry yogurt and orange zest.
