Bacon Egg and Cheese Breakfast Cups

An on-the-go breakfast layers all of your favorites -- potatoes, bacon, egg and cheese -- in a golden-brown Pillsbury™ biscuit cup.

Yellow onions, chopped, sautéed

Liquid eggs, pasteurized

Cheddar cheese, shredded

Crust
  1. Thaw biscuit pucks, covered for 20 minutes at room temperature or overnight in refrigerator.
  2. Sprinkle work surface and rolling pin lightly with flour; roll biscuits to 5 1/2-inch disks.
  3. Spray jumbo muffin cups and top generously with pan spray; press each disk into bottom and up sides of cup.
Assembly
  1. Layer 2 Tbsp potatoes, 1 Tbsp each of chopped bacon and sautéed onions into each cup.
  2. Add 2 oz eggs and top with 1 Tbsp cheese.
  3. Bake as directed and serve warm.
