Bacon and Beer Brownies

Beer is paired with sweets in a growing trend -- with good reason! The complementary flavors are fantastic. Add smokey bacon in the mix, and you've got an unbeatable combination.

Brownie

Stout beer or strong coffee

1/2 cup
Pecans, finely chopped

Bacon slices, crisp, chopped

Batter
  1. Pour water into mixing bowl. Add beer, pecans and brownie mix.
  2. Mix on low speed for 30 seconds. Stop mixer scrape bowl and paddle.
  3. Add 2 oz chopped bacon. Mix on low speed for an additional 30 seconds. Do not over mix.
  4. Place batter, using a #30 scoop, into greased standard size muffin pans.
  5. Bake as directed below and allow to cool.

*Rotate pans baked in a convection oven one-half turn (180°) after 7 minutes of baking.
Assembly
  1. Frost each brownie with 0.5 oz (2 tsp) chocolate icing and sprinkle with 1 oz (1 tsp) chopped bacon.
