Avocado Chocolate Tarts

Bite-size chocolate tart shells are filled with a sweet mascarpone-avocado filling, then topped with pistachios.

Topping
  1. Chop pistachios and place in sauté pan; toast over medium-high heat until fragrant.
  2. Set aside until needed.
Crust
  1. Place cake mix and butter in mixer bowl fitted with paddle attachment; mix 3-4 minutes on low speed until dough comes together and is well combined.
  2. Deposit dough using #40 scoop into well greased mini muffin cups.
  3. Bake as directed below; when removed from oven, immediately depress center of each tart using handle end of scoop then allow to cool.

*Rotate pans baked in convection oven one-half turn (180°) after 3 minutes of baking.
Filling
  1. Add Mascarpone cheese and avocado in bowl of food processor; blend until smooth and fully incorporated.
  2. Transfer mixture to large bowl; add condensed milk, salt and lime juice and stir until fully mixed.
  3. Place filling into air-tight piping bag and refrigerate 1-2 hours to chill.
  4. Pipe 0.5 oz chilled filling into cooled crust; sprinkle with approx. 1/2 tsp topping and serve.
