Apricot Rice Pudding

Creamy Mountain Highâ„¢ Original Style Plain Yoghurt folds into a cooked mixture with rice, spices and honey for a twist on old-fashioned favorite rice pudding.

Dried apricots, julienne

Turmeric, ground

Curry powder

Pudding
  1. Add rice, milk, honey, apricots, turmeric and curry to heavy bottomed sauce pan; simmer on low heat for 15 minutes, stirring occasionally.
  2. Remove from heat, transfer to stainless steel bowl and cool to room temperature.
  3. Fold in yoghurt using rubber spatula and refrigerate for 4-6 hours.
Serving
  1. Place 3 oz pudding (#8 scoop) into serving cup.
  2. Garnish with 1 tsp slivered almonds and 1 tsp apricots.
