Apricot Pistachio Tea Bites

Chewy apricots complement the flavor of buttery pistachios in a tender little cookie.

Dried apricots, diced

Pistachios, shelled, whole

  1. Mix all ingredients in mixer bowl with paddle attachment on low speed 4-6 minutes or until dough comes together and pulls away from bowl.
  2. Press dough into greased or parchment-lined half sheet pan.
  3. Chill dough approx. 20 minutes or until firm the remove from sheet pan.
  4. Cut into 8, 2-inch wide strips vertically.
  5. Cut each strip into 24, 1/2-inch thick pieces; place in 4x9 pattern on greased or parchment-lined full sheet pans.
  6. Bake as directed below.
