Prep
  1. Thaw biscuits, covered, 15-30 minutes at room temperature until flexible or overnight refrigerated.
Filling
  1. Combine water, apricots and orange juice in medium saucepan over medium heat until tender, about 30 minutes; drain, reserving liquid.
  2. Puree cooked apricots, honey and lemon juice in food processor until almost smooth; if needed add 1 Tbsp reserved liquid at a time to thin.
  3. Set aside and allow to cool completely.
Assembly
  1. Place thawed biscuits on parchment-lined sheet pan; place thumbprint in each biscuit to create a large well with 1/4-inch edge.
  2. Whisk egg and water in small bowl; brush tops of biscuits with egg wash.
  3. Fill each thumbprint with 1 - #70 scoop of apricot topping; spread to fill well.
  4. Top each generously with sanding sugar; bake as directed below and serve warm.
