Apple Waffle Sandwich with Cheddar Bacon Gravy

Cheddar Bacon Gravy
  1. Cook bacon in skillet until brown, drain grease, and chop into medium pieces; set aside.
  2. Combine gravy mix and 1 1/2 cups of water in mixing bowl; whisk until lumps are dissolved.
  3. Pour remaining water into heavy saucepan; bring to boil.
  4. Stir in dissolved gravy and water mixture; whisk until blended and sauce thickens, about 2-3 minutes and remove from heat.
  5. Add cooked, chopped bacon and cheddar cheese; stir until well blended and keep warm.
Honey Apple Waffle Batter
  1. Combine water, honey, eggs, oil and apples in mixing bowl; stir with wire whisk until well blended.
  2. Add pancake mix; stir until well mixed and smooth.
  3. Deposit approx. 2 oz of batter onto well oiled waffle iron, preheated to 375°F; bake 2-4 minutes or until golden brown.
Assembly
  1. Top one waffle with approx. 2 Tbsp gravy, 1 sausage patty, 1 fried egg, and another 2 Tbsp gravy.
  2. Place another waffle on top; serve immediately.
