Breakfast casserole starts with a muffin mix, and combines the fab flavors of apples, onions and sausage, suitable for advanced levels** of a dysphagia diet.

  1. Combine eggs and water in mixing bowl with wire whisk until combined; add muffin mix and whisk until batter is blended and smooth.
  2. Fold in ground sausage, apple pieces, onions, and sage using rubber spatula. DO NOT OVERMIX.
  3. Deposit 1 lb 4 oz (approx. 2 1/2 cups) batter into 9 greased 8-inch round cake pans.
  4. Bake as directed below; cut each cake pan into 8 slices and serve.
