Prep
  1. Thaw cinnamon twists, covered, either at room temperature 30 minutes until flexible or refrigerated overnight.
Assembly
  1. Untwist to a flat piece of dough, and place on cutting board; cut dough down center, lengthwise
  2. Press an end of each piece together to create 1 long line of dough, approx. 15 inches long.
  3. Hold both ends of dough and twist the left side towards you while twisting the right side away from you.
  4. Curl one end of the dough loosely around itself to create a circular spiral shape, leaving about 1 cm of space in between each ring of dough.
  5. Tuck the other end of the dough under the spiral and place on parchment-lined sheet pan.
  6. Press down the middle of dough gently; deposit #40 scoop (0.75 oz) apple filling in the center.
  7. Spread and flatten apple filling to make it flush with the top of the dough.
  8. Pipe 1 oz ring (1/4-inch diameter hole) of cream cheese filling around the outside of the apple filling.
  9. Bake as directed until cooked to 185°F in center and lightly browned.

*Rotate pans baked in convection oven one-half turn (180°) after 7 minutes of baking.
Finishing
  1. Heat apricot glaze until thinned out; brush edges of dough with approx. 1 Tbsp glaze and allow to cool completely.
  2. Heat icing in microwave until thinned out.
  3. Sprinkle on 1 Tbsp granola and drizzle 1 Tbsp icing over top; serve immediately.

  • If your apricot glaze is too thick, whisk in some warm water to loosen it.
