Apple Cobbler Cake

An old-fashioned treat stars in a yummy crumble that's irresistible with a dollop of whipped cream.

Batter
  1. Drain apples well, reserving 1 cup juice.
  2. Mix muffin mix, brown sugar and cinnamon in mixer bowl with paddle attachment on low speed 2 minutes.
  3. Add reserved juice and apples; mix on low speed just enough to moisten dry ingredients, approx. 20 seconds.
  4. Pour batter into lightly sprayed 12 x 20 x 2-inch full steam table baking pan; bake as directed below.

*Rotate pans baked in convection oven one-half turn (180°) after 22 minutes of baking.
Finishing
  1. Portion cooled cake in 4 x 6 pattern for 24 servings.
