Angel Food Cake Rolls

Colorful angel food cake is baked in a sheet pan, then rolled with a dreamy vanilla cream. Great for a make-ahead dessert.

Cake Batter

Food coloring

Batter
  1. Pour water into grease-free mixer bowl; add cake mix.
  2. Mix using wire whisk attachment on low speed 30 seconds.
  3. Stop mixer, scrape bowl well; mix on medium speed about 1 minute or until batter is light, fluffy and holds a slight crease.
  4. Transfer 6 oz batter to small bowl and stir in food coloring; set aside.
  5. Deposit 14 oz batter in each of 3 parchment-lined half sheet pans; add 2 oz colored batter per and swirl for a marble effect.
  6. Bake as directed below and allow to cool completely.

*Rotate pans baked in convection oven one-half turn (180°) after 4 minutes of baking.
Finishing
  1. Sprinkle each cake with approx. 1 Tbsp powdered sugar; cover with new sheet of parchment paper and invert on table.
  2. Remove paper liner from bottom of cake.
  3. Whisk cream and vanilla extract to stiff peaks, then spread 6 oz cream filling onto each cake.
  4. Grasp upper edge of parchment paper and roll cake lengthwise with firm pressure, so the cake sticks to the filling.
  5. Wrap with the parchment paper; place seam side down in refrigerator until thoroughly chilled (or wrap securely in plastic film and freeze for serving later).
  6. Remove paper and use a knife dipped in water for smooth, even slices.
