Almond Biscotti

Sliced almonds and almond extract combine for a two-fisted punch in a crunchy, twice-baked Italian cookie.

Vanilla extract

Almonds, sliced

  1. Place all ingredients in mixer bowl; mix using dough hook on low speed until well blended, approx. 2-3 minutes.
  2. Divide dough into quarters, approx. 2 lb each.
  3. Form each quarter into loaf, 20 x 3 x 3/4-inches.
  4. Place 2 loaves onto lightly greased or parchment-lined full sheet pan; bake as directed below and allow to cool.

  1. Cut strips crosswise into 25 pieces, approx. 3/4-inch thick.
  2. Place slices (10x5 pattern) standing upright onto lightly greased or parchment-lined full sheet pan
  3. Bake as directed below and allow to cool before serving.
