Vanilla Bean Cupcakes with Brown Butter Icing

Vanilla seeds amp up the flavor of a white cake, and nutty-flavored brown butter makes the icing irresistible.

Brown Butter Icing

Batter
  1. Prepare cupcake batter according to box directions adding scraped vanilla seeds to water in step 1.
  2. Deposit #16 scoop of batter into greased or paper-lined muffin pans.
  3. Bake as directed below and allow to cool completely.

*Rotate pans baked in convection oven one-half turn (180°) after 6 minutes of baking.
Brown Butter Icing
  1. Heat butter in heavy saucepan over medium heat, stirring constantly, approx. 5 minutes until butter turns brown and has a nutty aroma.
  2. Watch carefully to keep from burning, then remove pan from heat and allow to cool.
  3. Combine cooled brown butter, vanilla seeds and icing into mixer bowl fitted with paddle attachment; mix on low speed 1 minute.
  4. Mix an additional 30 seconds until smooth; set aside or refrigerate until needed.
Finishing
  1. Pipe approx. 1 oz icing (using large tip) on completely cooled cupcakes and serve.
