Tiramisu Bar Cake

A sugar cookie bottom layer holds a ganache and rich tiramisu filling. A coffee-glazed cake layer is next, topped with more filling and cocoa powder over the top.

Batter
  1. Prepare cake mix according to package directions.
  2. Deposit cake batter in parchment-lined full sheet pan and bake as directed below.

*Rotate pans baked in convection oven one-half turn (180°) after 5 minutes of baking.
Sugar Cookie Dough
  1. Cream butter and sugar in mixer bowl with paddle attachment on low speed until smooth, approx. 2 minutes.
  2. Add eggs and cake mix to bowl. Mix on low speed until incorporated.
  3. Stop mixer, scrape bowl and paddle. Mix on low speed 1 minute.
  4. Press cookie dough evenly to cover bottom of greased full sheet pan (for best results use pan extenders); bake as directed below.

Ganache
  1. Heat cream, butter and sugar in medium-size saucepan to boiling.
  2. Remove from heat. Add hot cream mixture to chocolate chips.
  3. Let stand 5 minutes. Stir mixture briskly until combined.
Coffee Flavored Syrup
  1. Heat sugar and water in medium-size saucepan to boiling.
  2. Remove from heat and allow to cool.
  3. Stir in coffee-flavored liqueur.
Filling
  1. Add egg yolks and sugar to mixer bowl with whisk attachment.
  2. Whisk 3 minutes on high speed, until pale yellow in color and thick.
  3. Mix cream cheese in another mixer bowl with paddle attachment on medium speed, until light and creamy, approx. 3 minutes.
  4. Fold egg yolk mixture into cream cheese using rubber spatula.
  5. Stir gelatin into brewed coffee until dissolved.
  6. Add small amount of the tiramisu filling into the coffee-flavored gelatin mixture; stir to combine.
  7. Continue adding tiramisu filling to the coffee-flavored gelatin mixture in small amounts until all of it is incorporated.
Finishing
  1. Place a frame over the baked sugar cookie dough (if pan extender was not previously used for baking).
  2. Spread chocolate ganache evenly over the baked sugar cookie crust.
  3. Refrigerate 10 minutes to let ganache set.
  4. Add 4 cups (1 lb 8 oz) tiramisu filling on top of the ganache and spread evenly.
  5. Invert baked yellow sheet cake onto filling and soak with coffee-flavored syrup.
  6. Spread remaining tiramisu filling evenly over the soaked cake.
  7. Freeze 1 hour to set.
  8. Remove outside frame, sprinkle with cocoa powder and slice with hot knife.
