Sweet Potato Bars

A buttery crust holds a smooth sweet potato filling in a bar rich with molasses, cinnamon and ginger.

Crust
  1. Combine biscuit mix, brown sugar, butter and cinnamon in mixer bowl on low speed with paddle attachment until well combined, approx. 2-3 minutes.
  2. Press mixture into greased or parchment-lined full sheet pan and firmly press crust into place.
Filling
  1. Mix sugar, salt, spices, flour and cornstarch (dry ingredients) in mixing bowl.
  2. Combine eggs, molasses, sweet potatoes, water and melted butter in another mixing bowl.
  3. Gradually add dry ingredient mixture and stir until well blended.
  4. Pour filling over crust then sprinkle pecans evenly on top; bake as directed below and allow to cool.
