Strawberry Cruffin Sandwich

Sweet and savory collide in these gourmet cruffin sandwiches, featuring tender short rib, zesty gorgonzola, crispy onions and a surprising horseradish kick.

Prep
  1. Thaw croissants covered, either at room temperature for 1 hour or refrigerated overnight.
  2. Roll up each croissant lengthwise, from one end to the other.
  3. Place in greased muffin pan pressing down slightly to flatten the bottom; bake until golden brown then allow to cool completely.

*Rotate pans baked in convection oven one-half turn (180°) after 12 minutes of baking.
Assembly
  1. Stir together mayonnaise and horseradish until combined.
  2. Cut cruffins in half horizontally; spread approx. 1 Tbsp of horseradish mayonnaise on the cut side of both cruffin pieces.
  3. Add 1 Tbsp Gorgonzola to each half then place 2.5 oz short ribs on bottom cruffin piece.
  4. Layer on 0.5 oz crispy fried onions, 1/4 cup microgreens and remaining cruffin piece; secure with a pick if desired and serve immediately.

  • Remember to press dough into muffin pan so you have a nice sturdy base.
