Strawberry Chocolate Napoleons

A gorgeous presentation is second only to the decadence of a dessert with layered puff pastry, a creamy chocolate custard and red, ripe strawberries.

Prep
  1. Thaw puff pastry sheets at room temperature approx. 15-30 minutes.
  2. Roll out to 1/8-inch thickness, then cut each sheet into 24 (2 x 3-inch) rectangles.
  3. Place on parchment-lined sheet pans, cover with parchment paper and 4 sheet pans on top (to weigh down puff pastry).

*Rotate pans baked in convection oven one-half turn (180°) after 7 minutes of baking.
Custard Filling
  1. Heat cream and milk to boiling in medium saucepan. Remove from heat, and let cool 1 minute.
  2. Pour mixture over chocolate in mixing bowl and let sit 1 minute. Stir until smooth and well blended.
  3. Whisk together egg yolks, eggs and sugar in another mixing bowl.
  4. Add egg mixture to melted chocolate; stir to blend.
  5. Pour mixture into shallow half hotel pan set in water bath.
  6. Bake until set (DO NOT OVERBAKE) and cool before using.

Assembly
  1. Place a puff rectangle on plate; pipe 1.5 oz of custard filling on top.
  2. Layer on approx. 1/4 cup sliced strawberries, another 1.5 oz of piped custard and a second puff rectangle.
  3. Pipe a final 1.5 oz custard on top; garnish with a fanned-circle cut from half a strawberry.
