  1. Bake croissants according to package directions; allow to cool completely.
Chicken Salad
  1. Add chicken, strawberries, poppyseed dressing, pecans, salt and pepper to a mixing bowl; stir until completely mixed.
Assembly
  1. Cut croissant in half horizontally; place approx. 1/3 cup arugula on bottom piece.
  2. Add approx. 1/2 cup chicken salad then top with remaining croissant piece; serve cold.
