Prep
  1. Thaw croissants covered, either at room temp. 30-60 minutes or refrigerated overnight.
  2. Place dough on parchment-lined sheet pans and cover with additional layer of parchment paper.
  3. Add 4 sheet pans on top to weigh down dough; bake as directed until golden brown and crispy then allow to cool completely.

*Rotate pans baked in convection oven one-half turn (180°) after 13 minutes of baking.
Assembly
  1. Place 5 cooled croissants onto a sheet pan; drizzle melted icing (approx. 0.25 oz) over each piece.
  2. Sprinkle on 1 tsp of chopped pistachios, then set aside.
  3. Place 2, #20 scoops (approx. 1.5 oz each) of ice cream onto remaining flat croissant piece.
  4. Add chocolate-topped croissant flat and slightly press together; serve immediately.
