Prep
  1. Thaw cinnamon roll dough covered, either at room temperature 15-30 minutes until flexible or refrigerated overnight.
  2. Cut each roll into quarters.
Assembly
  1. Add granulated sugar to medium bowl; add cut roll pieces and toss gently.
  2. Melt butter in medium saucepan then add brown sugar and stir until dissolved.
  3. Transfer roll pieces to well-greased half hotel pan; pour butter mixture over top.
  4. Place pan on sheet pan and bake as directed until golden brown.

*Rotate pans baked in convection oven one-half turn (180°) after 18 minutes of baking.
Finishing
  1. Allow pan to cool 15-20 minutes then run sharp knife around edges of pan.
  2. Invert sheet pan over top and flip to turn out bread; spoon remaining caramel over top and allow to cool completely.
  3. Heat icing in microwavable-safe container for 30 seconds, then in10 second increments stirring frequently.
  4. Drizzle over top and allow to set before serving.

  • Add different spices into the sugar mixture or icing to differentiate per season or concept.
